Healthy Matcha Blueberry Lemon Macarons


I'm walking through the streets of Paris and stop at this adorable shoppe, pops of pastel colors every where, the smell of sweet aromas lingering in the air. The door reads La Patisserie as I open the door I'm greeted with a glass of bubbly.... And that's when I wake from my dream.
what woman doesn't love the thought of being Marie Antoinette and eating Macarons all day right???!!

Macarons are these airy cookies that are filled with a decedant cream filling, they can be quite on the lighter side for being a cookie but I thought hey! why not take it up a notch and make them even healthier.

What you may not know about me is I was a pastry/caterer for a few years when I was younger before the kiddo & my love of Macarons began there.

Now don't be scared, yes there's a lot of ideas out there that Macarons are very hard to make, & that you need to practice, practice, practice. While this may be just a tad bit true, I think it's all about the Prep work. So I'll take you through my easy steps to make the perfect macaron.

Ingrediants for cookies:
3 egg whites
Coconut sugar 2 cups if your 
coconut sugar is course put it threw a 
blender to make in fine like powder
Cream of Tartar 1/4 tsp
Matcha 1 tbs 
Pinch of salt
Almond flour 1 cup
  1. Make sure you have a glass of Rose or chamomile tea READY, what ever you prefer... Now drink it up. This is a very important step as you want to be relaxed and calm wink wink!
  2. Measure all dry ingredients out by smoothing the top so they are leveled in the measuring cup and setting them in their own containers. take your almond, coconut sugar, matcha powder and sift it into a bowl. Take your time on this part and throw any clumps left in the sifter in the trash. Now set that aside.
  3. Now in your mixer: mix 3 egg white on low till frothy and you see some bubbles now add the cream of tartar, salt and start to mix on medium. Slowly poor in the sugar while the mixer is still on medium
  4. Now bump up the speed to full BLAST slowly! Watch it until you start seeing it getting firmer, stop the mixer every once in awhile until you see it forms into large peeks. Like this picture.


  5. Now here is where you take the bowl off the mixer and transfer all that foamy goodness into the dry ingredients bowl you set aside in the beginning.
  6. Time to get your guns out and let's do some exercising, BONUS! take a big spoon or plastic spatula and you're going to fold the foamy goodness into the dry ingredients this is going to take up to around 5 min.
  7. How do you fold: take your spoon and cut through the the center and fold under then turn the bowl a little and do it again. Keep doing this until the mixture looks like molten lava....yes molten lava.
  8. Now take a piping bag or even a large zip block bag and fill her up with the mixture. And set it aside, we will get back to it in a minute.
  9. Take a large cookie sheet and put parchment paper on top of it and turn the oven on to 300* Now take your piping bag and cut the tip about the diameter of a dime & start piping onto the parchment paper the size of....well a macaron or a half dollar coin.


  10. Fit as many as you can on the sheet but make sure they are evenly space about a 1/2 inch apart then tap the pan a couple times to get bubbles out, And let thenm sit out for 20 min ( this part is important) if you don't do this part your Macarons won't form, what is called “Feet” that bubbly bottom part of the cookie.
  11. Once you've let them sit for 20 min pop them into the oven for 15-20 min until they've raised 1/4 inch and take them out to cool.
  12. That's it! Now match each cookie with a look a like and set them aside to be filled.

Easy-Peasy BlueBerry Lemon Filling

Ingrediants:
8 oz Greek Yogurt Cream Cheese
1/4cup of Coconut Sugar
2tbs of Blueberry Lemon Jam or any flavor you would like.

This is what I used.

Mix all Ingrediants in a mixer until everything is combined and smooth then put in a piping bag.

-take your matched cookies you set aside and on one of the bottoms squeeze the filling onto it, the size of a quarter and push the matching cookie to make a sandwich (be gentle as these are very airy cookies) and you're done.

How to store them:
Well if you manage not to eat them all in one day. take a air tight container and place them carefully in there after you've made sure they are all cooled down and pop them into your freezer -they will last up to 3 months in the freezer. If you put them in the fridge the will last 3-5 days.
